Almost all of them formed a pocket. I did make the following adjustments: subbed 1/2 c. whole wheat flour for 1/2 c. of the all purpose, and I reduced the salt to 1 tsp. I also baked 3 at a time on a very very lightlly greased cookie sheet at 475 degrees because I don’t have the patience to cook one at a time.
