Whip up a flavor-packed Mediterranean-inspired chickpea salad with just 5 ingredients and 10 minutes of your time. This sandwich makes the perfect lunch for work, school, a hike, or just a fast meal on the go. The best part is that no additional seasoning is required since all of the ingredients used are already loaded with flavor.

Here’s everything you need to make this chickpea salad:

  • Greek Chickpeas with Cumin and Parsley – who would’ve thought so much flavor could be added to one simple can of Chickpeas? These make for a great snack on their own and are even better in this chickpea salad sandwich. Price: $2.49 – Find it in the aisle with the cans of beans and pasta; it will be located near the giant beans and Grecian eggplant.
  • Dolmas – Grape leaves stuffed with rice and an array of herbs and spices, soaked in olive oil. Mixed into this chickpea salad, it adds an interestingly bright flavor that is too tasty to pass up. Price: $2.99 – Find it in the aisle near the Greek chickpeas!
  • Hummus – You can use any hummus you’d like for this recipe, but I just used a basic one. If you want to get creative, feel free to experiment with different flavors and styles of hummus. Price: $2.49 – Find it in the refrigerated section with the other hummus and dips.
  • Vegan Feta CheeseThis dairy-free cheese alternative will blow your mind. From what I can remember, it tastes spot on to what dairy feta tastes like. It comes in block form in brine and can be crumbled onto your favorite salads or into other recipes like this one. Price: $4.29 – Find it in the refrigerated dairy section next to the other cheeses and dairy-free cheese selections.
  • Vegan Brioche Bread – A dairy-free version of the buttery brioche we all know and love. This tastes spot on to the brioche I grew up loving and is perfect for sandwiches, french toast, and so much more. Price: $3.99 – Find it in the bread aisle amongst the other selections of bread.

Equipment Needed:

  • Large bowl
  • Fork or potato masher
  • Large spoon
  • Medium skillet
  • Spatula

Here’s How to Make this Mediterranean-inspired chickpea Salad:

  • Add ingredients to a bowl and mash. In a large bowl, combine all of the ingredients except the bread. Mash the bowl’s contents with a fork or a potato masher until it resembles a tuna salad’s consistency. I like to keep mine a little bit chunkier.
  • Add mixture onto bread. Spoon a generous helping of the chickpea mixture onto one slice of bread and spread it evenly. Cover with another slice of bread and prepare a pan to toast the sandwich.
  • Prepare your skillet. In a medium skillet over medium-low heat, add oil or melt butter. Once melted, add your sandwich to the skillet and cook for 3-4 minutes or until the slice of bread face down is golden brown. Flip the sandwich and repeat.
  • Enjoy! Now it’s time for the best part, to eat!

Other Serving suggestions

  • Crackers. Serving this chickpea salad on crackers is a great way to enjoy this as a snack or to serve at a party.
  • Pita Bread. Heating a pita pocket and filling it with this Mediterranean-inspired chickpea salad would make for the perfect quick and easy lunch. If you want to make your own pita, we have a great recipe that can be found here.
  • Tortilla. Wraps can sometimes hit differently than sandwiches, so if you’re craving one, load it up with lettuce, tomato, avocado, and any other fixings you like.

  • Ciabatta Rolls – Fuffy bread that is perfectly constructed for sandwiches. I recommend freezing these if you don’t intend to eat them immediately because they will mold in a few days! Find these Ciabatta Rolls in the bread aisle. Price: $1.99
  • Vegan Kale, Cashew & Basil Pesto – Trader Joe’s vegan version of pesto is one of my go-to staple products. It whips up kale, cashews, and basil with olive oil, lemon, salt, and pepper for a flavor bomb you will never forget. Find this pesto in the store’s refrigerated section near the other dips. Price: $3.99
  • Fire Roasted Red Peppers – A simple and delicious staple of red peppers roasted over an open flame and jarred with salt, water, and red wine vinegar. I love to use these on sandwiches, pasta, and salads, but the options are endless. Find these fire-roasted red peppers in the center of the store near the other jarred and pickled vegetables. Price: $2.99
  • Dairy-free Mozzarella Shreds – A dairy-free alternative to mozzarella cheese shreds. It melts great and is perfect on this sandwich. Find these dairy-free cheese shreds in the refrigerated cheese section. Price: $3.99
  • Julianne Sun-Dried Tomatoes in Olive Oil – The perfect sun-dried tomato jarred up in olive oil and perfect for sandwiches, salads, and much more.   • Chickenless Crispy Tenders These make for the perfect meatless snack or appetizer. They’re also perfect on this vegan chicken pesto sandwich. I find them best cooked in the air-fryer, but you can also bake or pan-fry them. Find these chickenless crispy tenders near the other frozen chicken products in the frozen section. Price: $3.79

Here’s How to Make this Vegan Chicken Pesto Sandwich:

  • Cook the Chickenless Tenders. Prepare the tenders according to package instructions. I prefer to use the air-fry method.
  • Slice the bread. Cut the ciabatta rolls evenly down the middle. At this point, you can either toast the bread or leave it as it is. (I left it as it is since we will be toasting it later on in the process.)
  • Add the ingredients to the sandwich. First, add the pesto to both sides of the bread. Next, layer on one bell pepper, cut in half, 3 cooked tenders, sun-dried tomatoes, and a sprinkle of dairy-free mozzarella.
  • Toast. Pop the sandwich, open-faced into a toaster or conventional oven, along with the top slice of bread. Toast or bake until the cheese is melty and the bread is toasty. About 5-7 minutes. If using a conventional oven, I recommend setting the temperature to 350 degrees F.

The ratatouille bites are back in stock at Trader Joe’s, and I thought it would be fun to use them in a different application instead of as a traditional appetizer as they’re intended. This ratatouille parmesan sandwich packs a ton of flavor, and this easy meal comes together in just 20 minutes.

Here’s what you need to make this Ratatouille Parmesan sandwich:

  • Trader Joe’s Ratatouille Bites – a blend of tomato, eggplant, and peppers coated in panko bread crumbs. These can be found in the frozen aisle in the appetizers section. Price: $4.49 per package
  • Everything Ciabatta Rolls – Everything you love about ciabatta bread, but topped with everyone’s favorite everything seasoning. These can be found in the bread aisle. Price: $2.49 for a 4 pack.
  • Tomato Basil Marinara Sauce – A flavor-packed marinara sauce at an affordable price. This reminds me a bit of Rao’s Marinara, but for a fraction of the cost. This can be found with the other shelf-stable tomato products. Price $1.99 for 24 oz
  • Dairy-free Mozzarella Shreds – A dairy-free alternative to mozzarella cheese shreds. It melts great and is perfect on this sandwich. This can be found in the refrigerated cheese section. Price: $3.99 for 7 oz

Here’s how to make the Ratatouille parmesan:

  • Air Fry the Ratatouille bites. Prepare according to package instructions, but I found that the air fry method works best, and the top end of the cooking time.
  • Smash the Rataouille bites. Carefully smash the cooked ratatouille bites into thin patties using a spatula or any other flat object. I put 7 on my sandwich, but 4 would suffice!
  • Build the sandwich. Slice open the ciabatta bread, stack the Ratatouille patties on top, and add marinara and dairy-free cheese shreds.
  • Bake. Put the open-faced sandwich into the oven along with the top slice of bread, and bake it for 7-10 minutes at 400 degrees until the cheese is melty and the bread is toasty.
  • Enjoy. Allow the sandwich to cool slightly, add the top piece of bread on the rest of the sandwich, and dig in.
